Also makes great leftovers! 😌Full recipe: - 1 large sweet potato, peeled and cubed - season with salt, pepper, garlic powder and paprika - bake at 400 for 30-35 minutes - 1 can black beans, rinsed and drained - season with salt, pepper, garlic powder - 3 bell peppers (cut off tops and empty out, boil until tender) - 1 cup rice, 1.5 cups liquid, 1 tbs olive oil - Bring to boil, place lid on and simmer for 15 minutes - Remove heat and steam with lid on for 10 minutes and then fluff #yummy #dinner #dinnerideas
