Sivan was the first person to reach out to me and invite me into her kitchen when I posted about coming to LA, and I couldn’t be more grateful!!! We had the best time filming together and the recipe turned out so beautifully! You absolutely NEED to try it🫵🙂↕️ Ingredients for 2 giant summer rolls: 6 rice paper sheets 2 large iceberg or romaine lettuce leaves 1 cucumber 1 carrot 1/8 head of red cabbage 1 red bell pepper 1 avocado Small bunch cilantro and mint For the sauce: ⅓ cup peanut butter 2 tbsp soy sauce (or tamari for a gluten-free option) 2 tbsp rice vinegar 1 tbsp sesame oil Juice from 1-2 limes First, prepare the sauce to ensure the summer rolls are served fresh. Combine the peanut butter, soy sauce (or tamari), rice vinegar, sesame oil, and lime juice in a bowl. Mix well and set aside. Next, julienne the cucumber and carrot, shred the cabbage, and thinly slice bell pepper and avocado. To assemble the rolls, dip three rice paper sheets in cold water for about 10 seconds, then lay them on a work surface so they overlap in the center. Work quickly to prevent the rice paper from tearing. Place a lettuce leaf in the center of the rice papers, then layer the sliced vegetables on top. Start folding by bringing the bottom edge towards the center, followed by the sides, and then roll upwards tightly, similar to wrapping a burrito. Ensure the roll is fully sealed, and if needed, wrap it with an additional rice paper sheet. Repeat the process one more time to make the second summer roll. I get addicted to these every summer #summerrolls #vietnamesespringrolls Board by @melanated.maker Peanut dipping sauce: 3 Tbsp peanut butter 3 Tbsp hoisin sauce 2 Tbsp rice vinegar 1 garlic clove grated (Makes 1/2 cup of sauce, double if you’d like more!) Chop your veggies (I used cucumber, carrots & lettuce) and set to the side. To boiling water, add in your shrimp and cook about 2 minutes or until the shrimp are slightly curled and no longer translucent. Remove and add straight into an ice bath. To the same water, quickly dunk in your rice noodles then strain and rinse under cold water to avoid overcooking. Dip your rice paper into room temperature water and lay flat on your board (don’t worry if it’s still a little hard, it’ll soften as it sits). Lay down your lettuce, veggies, rice noodles and herbs (I used cilantro&mint). Roll once then lay 3 pieces of shrimp face down so that they show when it’s rolled. Continue rolling to cover the shrimp then fold in the sides. Add a piece of green onion to have it hanging out one side. Finish the roll, serve with your sauce topped with crushed peanuts and enjoy!

Save my recipe for Salmon Spring Rolls with Vietnamese Nuoc Cham Sauce! It’s one of my favorite go to dinners with the family. I seasoned my salmon with just salt, pepper and garlic powder because the Nuoc Cham sauce has a lot of flavor already. I then air fried my salmon and rolled in rice paper with lettuce, cilantro and cucumber. The dipping sauce is 4 tbsp of warm water, 4 tbsp of fish sauce, 2-3 tbsp of lime, 4 tbsp of sugar, 4 garlic cloves minced and 2 sliced Thai chilies. #springrolls #vietnamesespringrolls #summerrolls

Spring Rolls Ingredients * 1 lbs pork belly * 1 lbs shrimp * 3 shallots * 2 scallions * 3 slices ginger * 2 tsp salt * Vermicelli sheets * Lettuce * Carrots(julienne) * Cucumber(julienne) * Cilantro * Mint * Thai basil * Vietnamese coriander * Rice Paper Sauce * 2 tbsp neutral oil * 3 cloves garlic(minced) * 1/2 cup hoisin sauce * 1/4 cup peanut butter * 1 tbsp sambal * 1 tbsp rice vinegar * 1/4 cup coconut soda/water * Crushed peanuts Instructions 1. Add shallots, ginger, and scallions to a pot of water and simmer pork belly on medium heat for 15 minutes until cooked through. 2. While the pork is cooking, make the sauce by sautéing garlic with oil until fragrant(1 minute) on medium low heat. 3. Add hoisin sauce, peanut butter, sambal, and rice vinegar. Thin it out with coconut soda or water and once fully incorporated, set it aside to cool down and top with crushed peanuts. 4. Remove pork belly and place in an ice bath. 5. Add peeled deveined shrimp the same pot with the lid and the heat turned off. Let the residual heat cook the shrimp for 3 minutes then place shrimp in an ice bath. 6. Thinly slice pork belly and cut shrimp lengthwise. 7. Pour boiling hot water onto rice sheets for 1.5 minutes and place in an ice bath. Drain and set it aside. 8. Wash and prep vegetables and herbs. 9. Dip rice sheet into a bowl with warm water and place the vermicelli rice sheet onto the bottom third of the sheet followed by the lettuce, carrots, cucumber, and herbs followed and pork belly. Line up the shrimp on top making sure the orange side is facing down. 10. Summer Rolls ☀️
What’s not to love about these summer rolls! They are packed full of healthy and delicious herbs and veggies and the peanut dipping sauce is out of this world.
INGREDIENTS
• Rice paper roll wraps
• Cucumber, sliced into batons
• Mint, leaves no stem
• Basil, leaves no stem
• Carrots, sliced into batons
• Avocado, sliced
• Coriander, leaves no stem
• Butter lettuce
• Sesame seeds for topping
SAUCE
• 2 tbsp peanut butter
• 1/2 tbsp maple syrup or honey
• 1/2 tbsp rice vinegar
• 2 tbsp tamari or soya sauce
• 1 lime, juiced
• 1 thumb sized piece of garlic, grated
METHOD
1. Fill a shallow plate (or a pie pan or 9″ round cake tin) with an inch of water. Have another plate standing by ready at the side.
2. Place one rice paper in the water and rotate it in the water for about 10 seconds. You want it with some tautness to it still not super floppy. If it doubt go for less time rather than more. Carefully lay it flat on the additional plate.
3. Leaving about 1 inch of open rice paper around the edges, cover the lower third of the paper with your fillings. Sprinkle generously with the fresh herbs.
4. Fold the lower edge up over the fillings, rolling upward just until the filling is compactly enclosed. Fold over the short sides like you would to make a burrito. Lastly, roll it up. Repeat with the remaining ingredients. And don’t worry if it breaks you can just put this side plate down.
5. To make the peanut sauce: In a small bowl, whisk together the ingredients.
6. Serve the spring rolls with peanut sauce on the side. You can serve them whole, or sliced in half on the diagonal.
