Chocolate Covered Rice Cake Sandwich with PB & Jam😋 This is such a yummy combo😍 • Ingredients: 2 rice cakes 1 tablespoon unsweetened peanut butter (I use a pb that is 100% made of peanuts) 2 - 3 pieces of 80% dark chocolate 1/2 teaspoon coconut oil • For the strawberry chia jam: 3 big strawberries 1/2 teaspoon chia seeds • 1. Mash the strawberries 2. Add the chia seeds and stir to combine 3. Let sit for 20 minutes to let the chia seeds soak and mixture to thicken 4. Spread peanut butter onto one of the rice cakes 5. Then add the jam 6. Add the other rice cake on top 7. Melt the chocolate in the microwave with the coconut oil 8. Cover the rice cake sandwich with the melted chocolate 9. MANGO STICKY RICE 🥭 Back to Thailand pt. 1🇹🇭 Bringing a piece of my Thailand trip to your kitchens with this recipe.😋 Much love Maya ✨ RECIPE (4 servings, 5h prep time): -1 cup sticky rice Wash 6 times and cover with water and soak for 4h. Heat up water in a pot, place on top of it a sieve and a towel. Drain the rice and add it to the towel. Cover and steam for 20min. -1 cup (250ml) coconut milk -3 Tbsp sugar -1/2 Tsp salt Heat it up to dissolve the sugar. Place the steamed rice in a pot, pour over the coconut milk mixture, mix and set aside for 10-15mins. Coconut sauce: -1/2 cup (125ml) coconut milk -3 Tsp sugar -a small pinch of salt Bring it to a boil and add 1 Tsp of corn starch diluted in some water. Healthy Fruit Salad Jelly🤩 This is such a fun way to upgrade your regular fruit salad! Super easy and yummy!😋☀️ • Ingredients: 2 big oranges Fillings: 2 kiwis cut into cubes 1/2 mango cut into cubes 1/6 pineapple cut into cubes 4 strawberries cut into cubes 1/2 cup cold water (120 ml) 1/2 cup freshly squeezed orange juice from the oranges used as the bowls (120 m) 1 1/2 teaspoons agar agar (or gelatine according to its package) • 1. Cut the oranges in half and carefully remove the flesh (be sure not to cut the peel) 2. Mix the fruit cubes together in a bowl. Place the fruits into the orange bowls 3. Put the water, orange juice and agar agar into a small pot and stir to combine. Then bring it to a boil over medium heat and then let it simmer for approximately five minutes. Let it cool down for a few minutes. Pour on top of the fruits 4. Let set in the fridge for about 1 hour (if using gelatine, setting time might be longer) 5. 🍂🍁NO BAKE PUMPKIN BITES🍁🍂 They’re dairy free, gluten free, vegan, and refined-sugar free! Here’s the deets👇🏼 Ingredients: • 1/2 cup nut butter • 1/4 cup pumpkin puree • 3 tbsp maple syrup • 1 tsp vanilla • 1/4 cup coconut flour • 1 tbsp pumpkin pie spice • pinch of salt • 1/2 cup chocolate chips + 1 cup melted chocolate for dipping. • 1 tsp coconut oil Instructions: 1. In a large bowl, mix together nut butter, pumpkin, maple syrup, and vanilla. 2. Add in flour, pumpkin pie spice, and salt. Stir until combined. • Stir in chocolate chips. Place in fridge for ten minutes. • While dough is in fridge, melt chocolate for dipping. I like to add 1 tsp coconut oil to chocolate and melt in 30 second increments in the microwave. • Take dough out of fridge and roll into balls. Dip in melted chocolate. I like to use a fork for this! • Place in fridge or freezer to harden. You need to make these Pistachio Butter Chocolate Bars! - 145g pistachio butter - 3 tbsp coconut oil, melted - 2 tbsp maple syrup - Pinch of salt - 100g shelled pistachio kernels - 150g dark chocolate, melted Add the pistachio butter, melted coconut oil, maple syrup and salt to a bowl. Mix to combine.
Fold in the pistachios, then transfer into a loaf tin lined with baking paper*. Smooth over and freeze for a couple of hours.
Slice into bars, then cover with the melted dark chocolate making sure you cover the sides of the bars too.
Freeze again for a few minutes until the chocolate sets.

Panettone Cannoli! Makes 6-8 1/2 panettone 50ml plant-based milk 50g dark chocolate chips 2 tbsp icing sugar Ricotta filling 1 x tub vegan double cream 100g cashews (soaked) 50g caster sugar 1 tsp vanilla extract 180g vegan cream cheese You’ll also need cannoli moulds and piping bags (or sandwich bags like I used). Soak the cashews in how water for 20 minutes. Grab your panettone and slice it in half, then into long thin slices approx 2 cm thick. Use a cookie cutter or anything circle to cut out circles. Place one in between baking paper and roll until thin. Gently wrap them around cannoli moulds dabbing each edge with plant milk to help keep them closed. Bake at 180°c for 15-20 minutes until golden brown, then immediately carefully remove the moulds and let them cool. Blend the double cream on its own until whipped, then add the remaining ricotta ingredients to the blender and stop before it becomes too smooth. Store in piping bag and refrigerate for 15 minutes. Would you try this BLACK BEAN brownies?! 😳🍫 Never would I have thought I’d jump on the black bean brownie trend but after my chickpea blondies, I had to try it… review at the end! Ingredients 1 can black beans (drained and rinsed really well) 1/2 cup oats 2 tbsp cocoa powder 2 tbsp almond butter 1/4 cup maple syrup 1/4 cup coconut sugar or regular sugar 2 tbsp almond milk (or milk of choice) Pinch salt 1/2 tsp baking powder Chocolate chips to mix in + more for topping Blend together all ingredients in a blender or food processor (except chocolate chips). Stir in chocolate chips. Transfer batter to a parchment paper-lined dish. Spread evenly throughout dish, top with more chocolate chips and bake at 350F for about 18 minutes. Healthy Fruit Salad Jelly🤩 This is such a fun way to upgrade your regular fruit salad! Super easy and yummy!😋☀️ • Ingredients: 2 big oranges Fillings: 2 kiwis cut into cubes 1/2 mango cut into cubes 1/6 pineapple cut into cubes 4 strawberries cut into cubes 1/2 cup cold water (120 ml) 1/2 cup freshly squeezed orange juice from the oranges used as the bowls (120 m) 1 1/2 teaspoons agar agar (or gelatine according to its package) • 1. Cut the oranges in half and carefully remove the flesh (be sure not to cut the peel) 2. Mix the fruit cubes together in a bowl. Place the fruits into the orange bowls 3. Put the water, orange juice and agar agar into a small pot and stir to combine. Then bring it to a boil over medium heat and then let it simmer for approximately five minutes. Here’s the deets👇🏼 Ingredients: • 1/2 cup nut butter • 1/4 cup pumpkin puree • 3 tbsp maple syrup • 1 tsp vanilla • 1/4 cup coconut flour • 1 tbsp pumpkin pie spice • pinch of salt • 1/2 cup chocolate chips + 1 cup melted chocolate for dipping. • 1 tsp coconut oil Instructions: 1. In a large bowl, mix together nut butter, pumpkin, maple syrup, and vanilla. 2. Add in flour, pumpkin pie spice, and salt. Stir until combined. • Stir in chocolate chips. Place in fridge for ten minutes. • While dough is in fridge, melt chocolate for dipping. You need to make these Pistachio Butter Chocolate Bars! - 145g pistachio butter - 3 tbsp coconut oil, melted - 2 tbsp maple syrup - Pinch of salt - 100g shelled pistachio kernels - 150g dark chocolate, melted Add the pistachio butter, melted coconut oil, maple syrup and salt to a bowl. Mix to combine.
Fold in the pistachios, then transfer into a loaf tin lined with baking paper*. Smooth over and freeze for a couple of hours.
Slice into bars, then cover with the melted dark chocolate making sure you cover the sides of the bars too.
Freeze again for a few minutes until the chocolate sets.

Panettone Cannoli! Makes 6-8 1/2 panettone 50ml plant-based milk 50g dark chocolate chips 2 tbsp icing sugar Ricotta filling 1 x tub vegan double cream 100g cashews (soaked) 50g caster sugar 1 tsp vanilla extract 180g vegan cream cheese You’ll also need cannoli moulds and piping bags (or sandwich bags like I used). Soak the cashews in how water for 20 minutes. Grab your panettone and slice it in half, then into long thin slices approx 2 cm thick. Use a cookie cutter or anything circle to cut out circles. Place one in between baking paper and roll until thin. Gently wrap them around cannoli moulds dabbing each edge with plant milk to help keep them closed. Bake at 180°c for 15-20 minutes until golden brown, then immediately carefully remove the moulds and let them cool. Blend the double cream on its own until whipped, then add the remaining ricotta ingredients to the blender and stop before it becomes too smooth. Store in piping bag and refrigerate for 15 minutes. Would you try this BLACK BEAN brownies?! 😳🍫 Never would I have thought I’d jump on the black bean brownie trend but after my chickpea blondies, I had to try it… review at the end! Ingredients 1 can black beans (drained and rinsed really well) 1/2 cup oats 2 tbsp cocoa powder 2 tbsp almond butter 1/4 cup maple syrup 1/4 cup coconut sugar or regular sugar 2 tbsp almond milk (or milk of choice) Pinch salt 1/2 tsp baking powder Chocolate chips to mix in + more for topping Blend together all ingredients in a blender or food processor (except chocolate chips). Stir in chocolate chips. Transfer batter to a parchment paper-lined dish. Spread evenly throughout dish, top with more chocolate chips and bake at 350F for about 18 minutes.
