Healthy crispy chicken tenders & fries!🍗🍟 I think that one of the biggest keys to healthy eating is to make healthier versions of the foods that you LOVE so that you can eat them whenever you want! These air fried crispy chicken tenders and sweet potato fries really hit the spot - they are sooo delicious and easy to make! 🙌 I made this for 2 people but you can adjust the amount of sweet potatoes and chicken you make! 🍟 Sweet potato fries: - 4 sweet potatoes - 1 tbsp olive oil - 1/2 tsp each: paprika, garlic powder, salt, baking powder - 1/4 tsp pepper Preheat oven to 425. Slice the potaotes into long fry shapes. Add them to a big bowl and toss with olive oil and all the spices. Spread into a lined baking sheet and bake for 25-30 mins, tossing a few times while cooking. 🍗 Chicken tenders: - 5 chicken tenders (or slice chicken breast into long strips) - Salt & pepper - 1/2 cup breadcrumbs or panko - 1/2 tsp garlic powder - 1/2 tsp paprika - Olive oil spray (OR 1 beaten egg - I ran out!) Season both sides of the chicken with salt and pepper. Add the breadcrumbs to a shallow bowl with garlic powder, paprika, and a little salt and pepper and mix to combine. Lightly spray both sides of the chicken with olive oil OR dip in beaten egg, then coat both sides in breadcrumbs. Add to air fryer basket in a single layer and spray tops with oil. Air fry at 400F for 12 mins flipping halfway. Chopped Kale Caesar Salad 🥬🥗✨ This is my favorite lunch that I have been LOVING lately! It’s so easy to whip up, is packed with protein and healthy fats and is so delicious. The star of the show is the ‘caesar’ dressing. It’s not a traditional caesar dressing but tastes even better in my opinion! HEALTHY FRENCH FRIES 🍟😋 These fries are SO crispy and delicious, you won’t even know that they are healthier for you! We have been having these as our dinner side multiple times a week, they are sooo good and easy to make! You can adjust the recipe depending on how many people you want to feed - just lightly coat the fries in olive oil and add a big pinch of salt and they turn out perfect! Ingredients: - 4 russet potatoes - 1 tbsp olive oil - 1 tsp sea salt How to: - Wash and dry the potatoes. - Slice into even fry shapes about 1/2 inch thick. - Add to a big bowl of ice water and let soak for about 10 minutes, then rinse under cold water until the water runs clear. This removes the starch and makes the fries so much crispier! - Pat the fries completely dry with a clean towel. - Add to a bowl and toss in olive oil and sea salt. - Add to your air fryer and air fry at 400F for 25-30 minutes, shaking every 5-10 minutes until they are deep golden and crispy. - TIP: If you want to make a lot of fries but don’t want to overcrowd your air fryer, air fry half of them, then set aside on a plate and air fry the other half. Mediterranean chicken bowls with homemade tzatziki 🍋🥬🍅🥒 One of my goals for 2024 is to meal prep lunch more! I find that in the middle of the day I just want something quick & easy, and having a healthy lunch ready to go is so helpful 🙌 You can find this recipe and HUNDREDS of other healthy breakfast, lunch and snack recipes on Planned (linked in my bio!) 🥗 Bowl ingredients (makes 2 servings) - 1 cup cooked quinoa or rice - 8 oz grilled chicken breast, diced - 2 cup arugula or spinach - 1/2 cup diced cherry tomatoes - 1/2 of a cucumber, sliced - 1/4 of a red onion, sliced - 2 tbsp crumbled feta cheese Arrange the quinoa, chicken, arugula, cherry tomatoes, cucumber, red onion and feta in two airtight containers. Store in the fridge for 3-4 days! 🥒 Tzatziki ingredients (makes 2 servings) - 1/2 cup plain greek yogurt - 1/4 cup peeled and grated cucumber - 1 tbsp lemon juice - 1 tsp minced garlic - 1 tsp dried dill - Salt + pepper to taste Add all tzatziki ingredients to a bowl and stir well to combine. Store in the fridge for up to 4 days. Add a scoop to the top of the bowl when you are ready to eat!
