Ingredients 1 lb large carrots 2 garlic cloves, minced 3 tbsp unsalted butter 1 tbsp light brown sugar 3 tbsp pure maple syrup 1/2 tsp fresh thyme, finely chopped Salt & Black pepper Instructions First set the oven to 400 degrees. Next peel the carrots, trim off the ends, and cut in half lengthwise. Place the carrots in a large roasting pan or dish. Then add the light brown sugar, maple syrup, and fresh thyme to a small bowl. Add salt and pepper. Combine evenly. Pour the maple mixture over the carrots in the baking dish. Toss to combine thoroughly. Next slice the butter into thin slices. Place the thin slices on top of the carrots. Roast for 40-50 minutes, tossing one or two times throughout. Roast until the carrots are fork tender. Remove the carrots from the oven. Black bean and tofu patty’s with some roasted carrots for dinna 🥕🫘 Carrots: 4 large carrots 4 cloves of garlic 1 tsp cumin 1 tsp paprika Pinch of cayenne 1 tsp onion powder 1 1/2 cups grated cheese (should’ve used parm) Peel and cut carrots into similar size pieces. Add all of the seasonings, salt and pepper and some olive oil. Add the grated cheese to your pan and lay your carrots cut side down. Roast at 400 for 25 mins. Bean patties: 1 yellow onion 1 jalapeño 1 can of black beans 1 block of extra firm tofu 2 tablespoons tomato paste 1 tsp paprika Salt and pepper 1 or 2 eggs Sauté an onion and jalapeño in some oil with salt and pepper until tender (you could also add the shredded tofu and tomato paste at this point too) Add to a bowl then add the black beans and cooked tofu with tomato paste. Add some fresh parsley, paprika, maybe some cumin, salt and pepper and breadcrumbs and an egg or two. Mix it together and cook a small patty to make sure it tastes good and holds together. If not add more breadcrumbs or another egg. Form your shape and fry on both sides. I served it with hummus and yogurt and some lettuce and toast! You could for sure for sure make a burger! Make carrots delicious! 🥕 Roasted Smashed Carrots with Garlic Aioli Carrots: 1 bag baby carrots 1/4 cup parm cheese Olive oil Salt, pepper, thyme Garlic Aioli: 1/4 cup mayonnaise 2 tsp lemon juice 2 tbsp parm cheese 1/4 tsp salt 1 clove garlic minced 1. Boil the carrots 10 minutes, drain and lay on a sheet pan. Smash them down with a flat bottom glass or plate. Drizzle over olive oil, parm cheese, salt, pepper and thyme. 2. Bake at 400°F for 15-25 minutes. Smaller carrots will take less time, so just start checking at 15 minutes. They should be crisp and dark roasted, but not burnt. 3. harissa couscous salad with roasted carrots & chickpeas 🧡 i love love loveee a grain-based salad and this one is a new favorite! RECIPE (vegan): *makes about 2-3 servings* for the roasted carrots & chickpeas: -1 lb carrots, peeled & sliced into thick pieces on a slight diagonal (i like using multicolored!) -1 can (15oz) chickpeas, drained -1 tbsp olive oil -salt + pepper for the harissa vinaigrette: -2 tbsp olive oil -2 tbsp lemon juice -1 tsp harissa (i used trader joe’s brand which is pretty spicy but if you use a milder one like Mina, feel free to add more) -1 tsp maple syrup (or honey) -1 small clove garlic, minced -salt to taste for the salad: -2 packed cups arugula -1 cup cooked & cooled pearl couscous (can definitely add more if you prefer!) -1/2 cup fresh chopped herbs (i did a mix of parsley and mint, but dill would be good too!) preheat oven to 425F. rub chickpeas dry between a dish towel or paper towel. discard any skins that come off. add chickpeas and carrots to a baking sheet. drizzle oil over top and season with salt and pepper. toss to coat and then spread out evenly so that nothing is overlapping. bake for 35 minutes, or until carrots are tender and chickpeas are slightly crispy. let cool slightly. meanwhile, add all harissa vinaigrette ingredients to a small jar or bowl and shake or stir to combine. then, add all salad ingredients, including the carrots and chickpeas to a large bowl. drizzle harissa vinaigrette on top and toss to combine. best eaten fresh but can be stored in the fridge for several hours. enjoy :) #harissa #couscous #grainbowl #healthysalads #veganrecipes #funsalads #roastedcarrots #roastedchickpeas #summerrecipes #summersalads #uniquesalads #healthydinnerideas
