Amd while diet coke is not a health food (and i do suggest limiting consumption no different than you would regular soda), its not going to be the cause of your ☠️ . These high-protein, warm & cozy pumpkin pancakes are perfect for a rainy morning. Make sure to save this recipe so you can come back to it during the colder months! 1/2 cup pumpkin puree 2 large eggs 3/4 cup milk 2 tsp vanilla 1/2 cup cottage cheese 1 tsp baking powder 1 tsp pumpkin pie spice 1 tsp cinnamon 1 cup old-fashioned oats Add all ingredients to a blender. Heat a large nonstick frying pan over medium heat. Cook until the pancakes are set around the edges and deep golden-brown on the bottom, 2 to 3 minutes (this batter won’t bubble up like traditional pancake batter). Gently flip the pancakes with a thin spatula and cook until the second side is golden-brown, 1 to 2 minutes more. New series alert! I will be posting easy, nutritious snack ideas that are perfect when the late night cravings hit😅 I’ve seen this high protein snack idea all over my page lately so I needed to try it and it did not disappoint!! You do need to make sure you are using almond flour and a good quality cottage cheese. 1 cup cottage cheese 1 tsp vanilla extract 1/8 cup maple syrup blend in a food processor until creamy & pour into a bowl. Then add: 1 cup almond flour 1/4 cup vanilla protein powder you can melt 1/2 cup dark chocolate chips and dip the cottage cheese mixture into the chocolate or you can just add the 1/2 cup chocolate chips as is into the mixture. Refrigerate until the chocolate hardens and that’s it!
