Appetizer: ahi tuna crudo with a lime and tamari vinaigrette, radicchio, topped with royal osstera caviar & micro greens. Hi friends! 😊 Another day of cooking for my clients! On this night I forgot my apron along with many of my other cooking equipment. 🤦🏻♀️ ( I was embarrassed) I had to improvise and thankfully everything went as planned. It was game night which meant very late dinner. For the entree I prepared something I’ve made for my clients and his wife before that they really enjoyed. A steamed halibut topped with capers, red onion, thyme and a high quality olive oil over a carrot puree with a side of garlic green beans. The appetizer was a bone broth cream of broccoli soup which is another food item they loved the last time I prepared it. Sheet pan chicken tostadas 🥑✨🌮 recipe deets below!! What you’ll need: 1 pack of Guerrero Tostadas 1 lb of precooked chicken 1 packet of taco seasoning 1 can refried beans 8 oz shredded sharp cheddar cheese Optional Toppings: Guacamole Sliced grape tomatoes Diced red onion Sour cream Freshly chopped cilantro Hot sauce Instructions: Instructions: 1. Preheat the oven to 400 degrees 2. In a large bowl add the chicken and shred. Next, add about 1/2 a packet of taco seasoning and mix well. 3. Line a baking sheet with foil then add the tostadas. I could only fit 6 on at once so if you want to make more you’ll have to make it in a couple of batches. 4. Heat the refried beans in a microwave-safe bowl for about 2 minutes. This will allow it to spread more easily on the tostadas. 5. Add some refried beans, chicken, and grated cheese to each tostada. 6. Place in the oven for about 5 minutes until the cheese is melted. Broil for the last minute or so to get it nice and crisp. 7. Remove from the oven and serve. Top with your choice of toppings. I topped them with guacamole, sliced tomatoes, diced red onion, sour cream, and chopped cilantro. Ingredients: @Poppi for tbe good vibes 1 lb ground turkey 1 packet @Siete Foods spicy taco seasoning 1 yellow onion, diced @lundbergfarms spanish rice @Good Culture cottage cheese Mexican cheese Burrito sized tortillas Shredded lettuce 2 avocados 1 garlic clove Juice of 1 lime (more for topping) Cilantro Seasonings: Cumin, salt, pepper Instructions: 1. Brown onions and turkey, then add in taco seasoning 2. Cook rice as directed 3. In a bowl, combine taco meat, rice, shredded cheese and a few tbsp cottage cheese 4. in my meatball era…!? 😂 idk, but i’m not mad about it. these harissa chicken meatballs are SO flavorful, easy and a great protein source! also gluten & dairy free if that’s your thing :) RECIPE: for the harissa chicken meatballs (gluten free, dairy free): **makes about 18 meatballs** -1 lb ground chicken -1 egg -1/3 packed cup almond flour -1/3 cup finely diced onion (red or yellow will work) -1/4 cup chopped parsley -2 cloves garlic, minced -1 tbsp harissa (i used the trader joe’s one, if you’re using a milder brand like Mina then you may want to increase the amount) -1 tsp cumin -1/2 tsp ginger -1/2 tsp paprika -salt + pepper for the homemade hummus (gluten free, dairy free): -1 can (16oz) chickpeas, drained & rinsed -1/3 cup tahini -2 tbsp lemon juice -2 tbsp olive oil -1 clove garlic -handful of ice cubes (or some cold water) -1/2 tsp salt for the tomato cucumber salad (gluten free): -2 mini cucumbers, chopped -1 roma tomato, chopped -1/4 cup crumbled feta -1/2 tbsp red wine vinegar -salt add all meatball ingredients except for the ground chicken to a large bowl. stir until combined. then add ground chicken and mix until combined but try not to overmix! at this point you can refrigerate the mixture for 15 minutes to let it firm up or just move on. scoop out 2 tbsp and roll into balls. place onto parchment lined tray. air fry (or oven bake) at 400F for ~10 minutes. meanwhile, add garlic & chickpeas to a food processor & pulse until mostly chopped. then add tahini, lemon juice & salt. blend. slowly pour in the olive oil while the food processor is running. then, add in the ice cubes or cold water until it reaches your desired consistency. in a medium bowl, add all tomato cucumber salad ingredients and toss until combined. assemble your bowl with cooked meatballs, tomato cucumber salad, hummus and orzo if you’d like! enjoy :) #harissa #chickenmeatballs #meatballrecipes #easyandhealthy #healthydinnerideas #glutenfreedairyfree #airfryerrecipes #weeknightdinner #homemadehummus #harissachicken

in my meatball era…!? 😂 idk, but i’m not mad about it. these harissa chicken meatballs are SO flavorful, easy and a great protein source! also gluten & dairy free if that’s your thing :) RECIPE: for the harissa chicken meatballs (gluten free, dairy free): **makes about 18 meatballs** -1 lb ground chicken -1 egg -1/3 packed cup almond flour -1/3 cup finely diced onion (red or yellow will work) -1/4 cup chopped parsley -2 cloves garlic, minced -1 tbsp harissa (i used the trader joe’s one, if you’re using a milder brand like Mina then you may want to increase the amount) -1 tsp cumin -1/2 tsp ginger -1/2 tsp paprika -salt + pepper for the homemade hummus (gluten free, dairy free): -1 can (16oz) chickpeas, drained & rinsed -1/3 cup tahini -2 tbsp lemon juice -2 tbsp olive oil -1 clove garlic -handful of ice cubes (or some cold water) -1/2 tsp salt for the tomato cucumber salad (gluten free): -2 mini cucumbers, chopped -1 roma tomato, chopped -1/4 cup crumbled feta -1/2 tbsp red wine vinegar -salt add all meatball ingredients except for the ground chicken to a large bowl. stir until combined. then add ground chicken and mix until combined but try not to overmix! at this point you can refrigerate the mixture for 15 minutes to let it firm up or just move on. scoop out 2 tbsp and roll into balls. place onto parchment lined tray. air fry (or oven bake) at 400F for ~10 minutes. meanwhile, add garlic & chickpeas to a food processor & pulse until mostly chopped. then add tahini, lemon juice & salt. blend. slowly pour in the olive oil while the food processor is running. then, add in the ice cubes or cold water until it reaches your desired consistency. in a medium bowl, add all tomato cucumber salad ingredients and toss until combined. assemble your bowl with cooked meatballs, tomato cucumber salad, hummus and orzo if you’d like! enjoy :) #harissa #chickenmeatballs #meatballrecipes #easyandhealthy #healthydinnerideas #glutenfreedairyfree #airfryerrecipes #weeknightdinner #homemadehummus #harissachicken

Panko crusted cod with tomato basil couscous & fresh greens 🍅🌿✨ this is so yummy for summer and comes together in about 30 minutes! Perfect for those busy weeknights! On a big orzo kick Lemon Parsley Turkey Meatballs: -1 lb ground turkey -1 egg -1/2 cup bread crumbs -1 tbsp freshly chopped parsley -1 tbsp freshly chopped dill -1 tsp onion powder -1/2 tsp cumin -1 tsp salt -1 tsp garlic powder -1/2 tsp black pepper -1/2 tsp paprika -juice of 1/2 lemon -little bit go lemon zest -little bit of freshly grated Parm *Add all ingredients to a bowl and mix until combined, but don’t over mix. Shape into 1 inch balls and place on a baking sheet. Bake for about 10-11 minutes at 425 degrees. I use a meat thermometer to double check they have reached 165 degrees internal temperature. Pesto Orzo: -1 tbsp olive oil -1 tbsp butter -1 cup orzo -2 cups chicken broth -1/2 onion, diced -4 cloves minced garlic -2 tbsp chopped parsley -2 large spoonfuls of pesto -1/4 cup shredded parm -1/2 cup heavy cream -juice of 1/4 a lemon -little bit of lemon zest -salt and pepper to taste *Sauté onion in 1 tbsp olive oil over medium heat until softened. Add in 1 tbsp butter + garlic and sauté for 2 more minutes until fragrant. Add orzo and brown (about 5 minutes and stir frequently so it does not burn). Add in chicken broth, bring to a simmer, and cover. Let simmer for about 10 minutes or until most of the liquid is absorbed. Stir in pesto, salt, pepper, lemon juice, lemon zest, heavy cream, and parmesan. My Mediterranean inspired steak pita wraps with homemade tzatziki are so healthy & delicious! The roasted red peppers, with the olives, and the feta, ughhh soo good! You guys will love this one. Details below!⬇️ Ingredients: Steak: 1 lb flank steak 2 tbsp olive oil 1 tsp Worcestershire 1/2 lemon, juiced 3 garlic cloves, chopped 1 heaping tbsp fresh dill, chopped 1 tsp honey 1/4 tsp salt 1/4 tsp pepper 1/4 tsp onion powder 1/2 tsp dried oregano *Combine all ingredients in a medium sized bowl and let marinade while you prep everything else. *Set air fryer to 400 and cook for 5-7 minutes. I did about 5 minutes as I like a more medium/rare steak. Tzatziki: 1/2 cup plain greek yogurt 1/4 cup fresh dill, chopped 2 small mini cucumbers, chopped 1/2 lemon, juiced 1 large garlic clove. Chopped Just under 1/4 tsp salt (you can always add more to taste) Pinch pepper *Start by chopping your cumbers really small. Add a pinch of salt over top of the chopped cucumbers and let them sit for 5-7 minutes to sweat a bit. Squeeze any excess water out of the cucumbers before adding it to your bowl. *Add all ingredients in a small bowl, mix well, and taste for any additional seasonings. Hello friends! Tonight’s dinner for my NBA player client, his wife and their guest was a creamy leek & cauliflower bone broth soup puree as a starter.
