Welcome back to my rice cooker series 🐔 For the ginger scallion sauce Chopped scallions Minced ginger MSG (or salt if you don’t like msg) Sugar Sesame Oil Neutral flavored oil 1. Heat up the oil. My rice cooker is weight sensitive, so I pop the lid on to do this. 2. Combine chopped scallions, minced ginger, msg, sugar, and sesame oil in a heat safe bowl. 3. Pour hot oil on top. Adjust to taste. For the rice and chicken (for a 4 c cooked rice cooker, the small one) 1 1/4c chicken broth/stock 1 c washed jasmine rice 3 minced garlic cloves 1/2 to 1 tbsp soy sauce (adjust depending on how salty the broth/stock is) 1 tsp sesame oil 2 boneless skin on chicken thighs (season with salt and pepper + brushed with dark soy sauce for extra color but this is optional) 1 in piece of thinly sliced ginger Scallion bottoms Neutral flavor oil 1. Add a bit of oil to the rice cooker followed by the garlic and rice. Hit cook and let slowly sauté till aromatic. Not gonna lie, I definitely got lazy and impatient waiting half way through so this is optional :p 2. Add the chicken broth, ginger, scallion bottoms, and chicken thighs. Day 3/20- Honey Soy Chicken Ingredients: - 4 boneless, skinless chicken thighs, diced - 1 tsp garlic powder - 1 tsp onion powder - 1 tbsp honey - 2 tbsp soy sauce - 1 tsp chilli powder - 1/2 tsp msg (optional) - 1 tsp ginger paste - 1 tsp sesame oil - 1/2 tsp white pepper 1. Combine all ingredients in a bowl and mix well to combine and completely coat the chicken. Allow to marinate for 5-10 mins minimum 2. Heat up a large frying pan on high for 5 mins. Add 1 tbsp of any high heat oil and coat the bottom of the pan. 3. Fry off all marinated chicken until cooked through and the marinade caramelises and turns a darker brown colour 4. Chicken, Mushroom, and Wild Rice Soup ❤️🔥 I’ve been making this recipe for years, but it’s never turned out as good as it did this round. SO I’m sharing it! Here’s how to make it: 2 large chicken breasts (or a rotisserie chicken) 2 tbsp olive oil, divided 1 tbsp butter 1 medium onion, diced 2 large carrots, diced 2 celery stalks, diced 1 tsp dried thyme 1 tsp dried rosemary 1 tsp dried parsley 1 tsp red pepper, to taste 1/2 tsp turmeric (optional) 8 garlic cloves, minced, to taste 2 tbsp flour 1 cup dry white wine 8 oz portobello mushrooms, sliced (can use cremini or white mushrooms) 1 cup wild rice (I used @lundbergfarms) 1-2 tsp chicken bouillon, optional 6 cups chicken broth 1 bay leaf Parmesan rind (optional) 1 cup sour cream Juice from 1/2 lemon, to taste Salt and freshly ground black pepper, to taste Parmesan cheese, black pepper, and fresh thyme for garnish Instructions: 1. Season the chicken breasts with salt, pepper, thyme, rosemary, parsley, and turmeric. 2. Heat 1 tbsp olive oil over medium-high heat in a large pot or Dutch oven. Sear the chicken for about 3-4 minutes per side until golden brown. Remove and set aside. 3. In the same pot, add butter and the remaining 1 tbsp olive oil. Add the diced onion, carrots, and celery, with a pinch of salt and the remaining seasonings. Sauté for 5-7 minutes until softened. 4. Add the sliced mushrooms and cook for another 5 minutes until tender and browned. 5. Stir in the minced garlic and cook for 30 seconds. Sprinkle in the flour and cook for 2 minutes, stirring. 6. Pour in the white wine, scraping up any brown bits. Simmer for 2-3 minutes until reduced. 7. Add the chicken broth, wild rice, chicken bouillon (if using), salt, and pepper. Stir to combine. 8. Return the seared chicken to the pot, along with a parmesan rind (if using) and a bay leaf. Bring to a boil, then reduce heat, cover, and simmer for 45 minutes. 9. Remove the chicken, shred it, and return it to the pot. Simmer for another 5 minutes. 10. Remove the bay leaf and parmesan rind. Turn the heat off and stir in the sour cream until fully combined. Adjust seasoning with salt, pepper, and lemon juice. 11. Garnish with fresh thyme, black pepper, and parmesan cheese. Chicken & Rice Recipe 📌 a classic! Macros: 485cal | 31g protein | 9.5g fat | 55g carbs | serves 6 Ingredients: * 750g or about 5 chicken drumsticks (can use breast or thighs if preferred) * 3 cups reduced sodium chicken broth * 1 cup water * seasonings: 1 tbsp onion powder, garlic powder, course black pepper * 1/2 tbsp tony’s creole seasoning and chicken bouillon * accent or salt to taste (optional) * 1 packet lipton onion seasoning * 3 stalks celery * 1/2 large sweet onion * 1-2 10.5oz cans 98% fat free cream of chicken (campbells brand used) * 2 cups uncooked WASHED jasmine rice Notes: * combine broth, water, seasonings, onion and celery and bring to a boil * add chicken in and boil for about 35min, take it out, shred it, then put back in (i remove any fat/skin) * add both cans of cream of chicken soup (optional accent seasonings to enhance flavors) * add WASHED uncooked jasmine rice , let cook with top on on medium low heat for about 18-20 minutes (don’t over cook it, u don’t want your rice soggy) * if you’d like it less soupy, decrease water/broth content (but be mindful, the uncooked rice will absorb liquid as it cooks) * ** rice may stick to the bottom of the pot while cooking, you probably can stir it throughout to avoid it** #highprotein #lowfat #protein #fatloss #caloriedeficit #lowcalorie #mealprep #weightloss #macrofriendly #chickenandrice #foodie #macros #gymfood #chicken #chickenrecipe

Grandma’s chicken & mushroom rice lives on @ZWILLING Canada #ad RECIPE: 3-4 chicken thighs, skin on pinch salt pinch pepper 6oz cremini mushrooms 1/2 tsp herb de provence 1 cup long grain rice, washed 1 1/2 cups chicken broth 1 can Campbell’s mushroom soup 1 pckg Knorr’s onion soup mix Preheat oven to 325 degrees. Season chicken with salt and pepper. In an oiled skillet, sear chicken for 4-6 minutes on each side until golden brown. Set aside. Add sliced mushrooms to the pan & herb de provence. Sauté until browned, remove from heat. Add remaining ingredients to your ceramic pot, place thighs and mushrooms on top. Cover with lid. 30 days of one pot recipes 👩🏽🍳 Day 22: chicken fajita inspired rice 🌮 461 calories • 50g protein • 51g carbs • 7g fat (per portion) Ingredients: (4 portions) 600g chicken breast (4 x 150g/dice) 200g basmati rice (uncooked weight) 1 tin chopped tomatoes 1 chicken stock pot 1 tin sweetcorn 1 red onion 1 red bell pepper Mushrooms Cherry tomatoes 1 pack fajita seasonings/make own 60g reduced fat cheddar 40g grated mozzarella 500ml water Paprika, salt, pepper, garlic powder, herbs Toppings; jalapeños, 0% fat Greek yogurt, salsa 1. Season chicken breast on both sides with fajita seasoning, extra paprika, garlic, herbs, salt & pepper. Cook in a pan completely or sear on both sides and finish in the oven for 30 mins whilst you cook the rest. 2. Deglaze the pan with some water and cook your onions in the flavour, once softened add peppers, mushrooms & cherry tomatoes to cook. 3. Wash your rice & add to the pan with water, chopped tomatoes, water, stock pot & seasonings; rest of fajita seasoning, salt, pepper, garlic & paprika and allow to simmer whilst mixing for 15-20 mins. 4. Once it’s cooked and thickened (if the rice is still hard add more water and let it cook through taste as you go) cover in cheddar & mozzarella and allow to melt, add back in your chicken breast & either add toppings and enjoy or pop in tubs for meal prep! If you’re meal prepping just put the toppings in a separate tub to add after reheating or add as you go! Creamy Cajun Chicken & Rice Stealth Health 500 Calorie Meal Prep Series, Episode 32 Per serving (makes 5) 500 Calories 43g Protein 59g Carbs 9g Fat Ingredients: 24oz chicken breast Juice of ~1 lemon 1 tablespoon olive oil 1 tablespoon Cajun seasoning 2 tsp coarse salt* *Use 1 tsp if using fine salt. General rule of thumb - if a recipe calls for coarse salt, and you’re using fine grain salt, divide the volume in half. Secondly - the “Cajun Seasoning” I used was found at Whole Foods and does not contain sodium - adjust salt content if the seasoning you’re using does have sodium 1 tablespoon butter 1 diced onion 1 diced red bell pepper 6 cloves minced garlic 320g basmati rice 580ml water 2 tsp chicken bouillon (2 chicken bouillon cubes, OR replace water with chicken broth) BRING WATER TO BOIL, COVER, REDUCE HEAT TO LOW, COOK FOR 20 MINUTES. REMOVE FROM HEAT, KEEP COVERED, LET SIT FOR 10 MORE MINUTES Sauce: 180g fat free evaporated milk 40g light cream cheese 30g fat free mozzarella Juice of 1/2 lemon 1 tablesooon Cajun seasoning Salt to taste (Reserve other half of lemon for deglazing pan after cooking chicken) Separate rice in to 5 even sized portions, top with chicken, and pour over sauce.
