Ramadan Recipes : Chicken & Sweetcorn Breadrolls Recipe (makes 20-25) - 500g chicken breast - 2 tbsp oil - 1 onion - 3 cloves garlic - 1 tsp paprika - 1 tsp salt - 1 tsp black pepper - 1 tsp oregano - 1 tsp ground cumin - 1 tsp chilli flakes - 1 tbsp plain flour - 125 ml whole milk - 50g cream cheese - 150g sweetcorn - 100g shredded mozarella - White bread slices - 3 eggs and 4 tbsp milk - 150g breadcrumbs Method 1. Sauté onions and garlic for 3 mins 2. Add chicken and seasonings 3. Cook chicken for 10 mins on medium heat 4. Add plain flour 5. Cook for a further 3-4 mins to get rid of raw taste 6. Add milk 7. Once thickened (2-3 mins on low simmer) add the cream cheese and sweet corn, mix well 8. Take off heat and allow to fully cool 9. Once cooled, add mozzarella if you want to make it cheesy 10. Remove crusts off bread and roll out till thin 11. Fill with 1 tbsp of filling 12. Seal edges with a flour-water mix and pinch to seal well 13. Optional but can also seal with a fork but not necessary 14. Coat in egg-milk mixture 15. Coat in breadcrumbs 16. This way is so much better than the dried up version 🔥 Buldak Soup Noodles: * Make 200ml of chicken stock. * Boil 1 pack of Samyang Buldak Carbonara noodles in some boiling water, once soft & can untangle from the block then add 100ml chicken stock. * To a bowl, add the carbonara sachets - sauce & powder. Add 1 egg yolk & 1 tablespoon kewpie mayonnaise. Mix well until it forms a paste, then add in the remaining 100ml chicken stock. Mix well. * Once the noodles are cooked, add it to the sauce mixture. Mix well. * Top with chopped coriander or spring onion, & some chilli oil. Episode 7 of 30 of the Ramadan series: Hot honey garlic cheese bread 🍯🧄 Recipe below 👇🏽 Ingredients: 2 heads of garlic 1 shallot/small onion Olive oil Salt Black Pepper 170g/1 stick softened unsalted butter 1 large loaf of bread 2 cups mozzarella or gruyere cheese, freshly grated 4 tbs honey 1 tsp chilli flakes 1 tsp hot sauce Parsley for garnishing Steps: 1. Preheat oven to 180C/350F. 2. Cut the tops of the garlic heads and the shallot or onion in half. 3. Place on a sheet of foil and drizzle olive oil and add a sprinkle of salt and pepper. 4. Wrap them up and place in the oven to roast for 45 minutes. 5. Squeeze out the garlic and shallot/onion and add to the butter. Season with salt and pepper to taste then mash with a fork. 6. If the garlic and shallot/onion are too hot and the butter melts pop the bowl in the freezer for a few minutes to harden and become spreadable. 7. Cut the bread open and spread the garlic butter on both sides then add as much cheese as you want. 8. Bake on the broiler setting of your oven or at 200C/390F for 10 minutes or until the cheese is melted and golden. 9. For the hot honey combine honey, chilli flakes and hot sauce in a pan and mix on low heat for 2 minutes. 10. Tereyağ üzerindeki köpüğü mutlaka alın yoksa yanık duruyor. * Üzerine ceviz veya Antep fıstığı serpin. Make sure to remove the foam on the butter otherwise it looks burnt. * Sprinkle walnuts or pistachios on it. Grease the remaining round phyllo sheets layer by layer, spread only vegetable oil on the top layer and cut into 16 pieces. * Bake at 180 degrees on the grill on the bottom floor until golden brown. Ramada Recipes - Philly Cheesesteaks 5 brioche hotdog rolls 5-6 slices Somali steak or thinly sliced steak (about 200-250g), slice into smaller pieces 1 small white onion, diced 1 small green pepper, diced Tbsp butter Seasoning: tbsp meat or steak seasoning, tbsp smoked paprika, tsp cumin, tsp garlic powder, salt and pepper to taste Cheese sauce: 5 slices of cheese with 2 tbsp milk 1/2 cup grated cheddar Garlic butter: melted butter, salted garlic purée and chopped coriander Make more sauce for dipping! Oil for frying 1. Heat up some oil in a frying pan/skillet and add your onions. Leave to sauce for a few minutes and then add your sliced beef. 2. Add all your seasoning and continue to cook. 3. Add your pepper and butter and cook for a further 3-5mins. Remove from heat. 4. Grab an oven dish and lightly spray with oil to prevent sticking. Add your bread that you have sliced down the middle and leave the top to a side. 5. Add your melted cheese at the bottom, then layer it with the meat, then add grated cheese and top with a tbsp of the melted cheese. Place the top half of the bread on top, brush with the garlic butter. 6. Cover with foil and bake in a preheated oven @190c for 10-12mins. Ramadan cravings part 13: Chicken gyoza. Honestly one of our favourite foods, they’re perfect as appetisers and always a crowd pleaser, make them in advance and freeze for those last minute guests or to spice up those emergency ramen days 😋 Full recipe (makes approx 33-35) 500g chicken mince 1 tsp minced ginger 1 tbsp minced garlic Half a white onion finely minced 4-5 stems spring onion finely diced 2-3 tbsp finely diced coriander 1 tbsp (3-4) green chillies finely diced 1.5 tsp chilli flakes 3 tsp soy sauce 3/4 tsp salt 1/2 tsp black pepper sesame oil for pan frying For the gyoza dough: 3 cups plain flour 1.5 cup hot tap water Dipping sauce: 1 cloves minced garlic 2 tsp chilli oil 1 tsp toasted sesame seeds 3 tsp soy sauce 1 tsp sesame oil Finely diced spring onion Mix together all of the filling ingredients and set aside To make the dough, slowly add the water to the flour and until it comes together to form a dog dough, knead until smooth, drizzle over some oil and cover with a tea towel. Rest for 20-30 minutes Roll out the dough until thin and cut out with a 88mm round cookie cutter Add in a heaped tsp of filling into the middle and seal. Cook immediately or freeze on a tray making sure none of the dumplings touch, then once frozen seal in ziplock bags and store in the freezer. To cook from frozen, sear the dumplings for 1-2 mins or until the bottoms are golden brown, add in a few tablespoons of water and close the lid, allow the dumplings to steam for 7-9 minutes. Ramadan recipes: Chicken brioche buns This recipe makes 12 large buns or 16 smaller buns. Dough: - 250ml whole milk (warm) - 15g active dry yeast/instant - 30g sugar - 500g plain flour - 90g unsalted butter - 1 large egg - 1 tsp salt - Egg wash: 1 egg yolk & 2 tbsp milk Filling: - 300g shredded chicken breast - 2 tbsp vegetable oil - 1 red onion - 3 cloves garlic - 2.5 tbsp tomato purée - 1 small red pepper - Just under 1 tsp salt (or to taste) - 1/2 tsp oregano - 1/2 tsp cumin powder - 1/2 tsp coriander powder - 1 tsp red chilli flakes (optional) - 1 tsp paprika - 2 tbsp fresh coriander - 100ml water - 120g shredded mozarella (optional) Method: 1. Add yeast and sugar to warm milk, whisk and allow to sit for 10 mins till slightly frothy 2. Add flour, butter, egg and salt, knead for 10 minutes until a smooth dough forms 3. Cover with cling film and allow to sit at room temperature for 2 hours until the dough doubles in size 4. Divide into equal pieces - 10-12 for large buns or 15-16 for mini buns 5. Shape into balls 6. Flatten out with fingers and add 1.5 tbsp of filling into centre, and optional mozarella. Pull the sides up to encase the filling and pinch the dough at the top to avoid leakage 7. Brush with egg wash and cover with tea towel, allow to rise for another hour 8. Brush again with egg wash after 2nd rise 9. Bake in a preheated oven at 180C for 20-25 minutes or until golden brown 10. Optional brush with garlic and herb butter for extra yum! #ramadanrecipes #ramadan2024 #brioche

Ingredients: Biscoff Mini Cheesecake: - 500 g Cream cheese - 350 ml Double cream or fresh cream - 125 ml Condensed milk - 250 g Biscoff spread Base: - 300 g Lotus biscuits - 70 g Butter - 30 ml Condensed milk Topping: - 80 g Biscoff spread (microwave for 20 seconds for a running consistency) Instructions: 1. Crush the Lotus biscuits and add melted butter and condensed milk. Mix well to combine. 2. Press the biscuit mixture into the base of a 20 cm square cake tin. Refrigerate for 30 minutes to set. 3. In a mixing bowl, combine cream cheese and Biscoff spread. Mix until smooth and well combined. 4. Add the double cream and condensed milk to the cream cheese mixture. Whisk until stiff peaks form. 5. Pour the cheesecake mixture over the prepared biscuit base in the cake tin. Smooth the top with a spatula. 6. Refrigerate the cheesecake for 6-8 hours, or until set. 7. In a microwave-safe bowl, melt the Biscoff spread for 20 seconds until it reaches a running consistency. 8. Spread the melted Biscoff spread over the top of the chilled cheesecake. 9. Refrigerate the cheesecake again until the topping is set. 10. Once set, remove the cheesecake from the tin and slice it into bars. 11. Ramada Recipes - Philly Cheesesteaks 5 brioche hotdog rolls 5-6 slices Somali steak or thinly sliced steak (about 200-250g), slice into smaller pieces 1 small white onion, diced 1 small green pepper, diced Tbsp butter Seasoning: tbsp meat or steak seasoning, tbsp smoked paprika, tsp cumin, tsp garlic powder, salt and pepper to taste Cheese sauce: 5 slices of cheese with 2 tbsp milk 1/2 cup grated cheddar Garlic butter: melted butter, salted garlic purée and chopped coriander Make more sauce for dipping! Oil for frying 1. Heat up some oil in a frying pan/skillet and add your onions. Leave to sauce for a few minutes and then add your sliced beef. 2. Add all your seasoning and continue to cook. 3. Add your pepper and butter and cook for a further 3-5mins. Remove from heat. 4. Grab an oven dish and lightly spray with oil to prevent sticking. Add your bread that you have sliced down the middle and leave the top to a side. 5. Add your melted cheese at the bottom, then layer it with the meat, then add grated cheese and top with a tbsp of the melted cheese. Place the top half of the bread on top, brush with the garlic butter. 6. Cover with foil and bake in a preheated oven @190c for 10-12mins. Ramadan cravings part 13: Chicken gyoza. Honestly one of our favourite foods, they’re perfect as appetisers and always a crowd pleaser, make them in advance and freeze for those last minute guests or to spice up those emergency ramen days 😋 Full recipe (makes approx 33-35) 500g chicken mince 1 tsp minced ginger 1 tbsp minced garlic Half a white onion finely minced 4-5 stems spring onion finely diced 2-3 tbsp finely diced coriander 1 tbsp (3-4) green chillies finely diced 1.5 tsp chilli flakes 3 tsp soy sauce 3/4 tsp salt 1/2 tsp black pepper sesame oil for pan frying For the gyoza dough: 3 cups plain flour 1.5 cup hot tap water Dipping sauce: 1 cloves minced garlic 2 tsp chilli oil 1 tsp toasted sesame seeds 3 tsp soy sauce 1 tsp sesame oil Finely diced spring onion Mix together all of the filling ingredients and set aside To make the dough, slowly add the water to the flour and until it comes together to form a dog dough, knead until smooth, drizzle over some oil and cover with a tea towel. Rest for 20-30 minutes Roll out the dough until thin and cut out with a 88mm round cookie cutter Add in a heaped tsp of filling into the middle and seal. Cook immediately or freeze on a tray making sure none of the dumplings touch, then once frozen seal in ziplock bags and store in the freezer. To cook from frozen, sear the dumplings for 1-2 mins or until the bottoms are golden brown, add in a few tablespoons of water and close the lid, allow the dumplings to steam for 7-9 minutes. Ramadan recipes: Chicken brioche buns This recipe makes 12 large buns or 16 smaller buns. Dough: - 250ml whole milk (warm) - 15g active dry yeast/instant - 30g sugar - 500g plain flour - 90g unsalted butter - 1 large egg - 1 tsp salt - Egg wash: 1 egg yolk & 2 tbsp milk Filling: - 300g shredded chicken breast - 2 tbsp vegetable oil - 1 red onion - 3 cloves garlic - 2.5 tbsp tomato purée - 1 small red pepper - Just under 1 tsp salt (or to taste) - 1/2 tsp oregano - 1/2 tsp cumin powder - 1/2 tsp coriander powder - 1 tsp red chilli flakes (optional) - 1 tsp paprika - 2 tbsp fresh coriander - 100ml water - 120g shredded mozarella (optional) Method: 1. Add yeast and sugar to warm milk, whisk and allow to sit for 10 mins till slightly frothy 2. Add flour, butter, egg and salt, knead for 10 minutes until a smooth dough forms 3. Cover with cling film and allow to sit at room temperature for 2 hours until the dough doubles in size 4. Divide into equal pieces - 10-12 for large buns or 15-16 for mini buns 5. Shape into balls 6. Flatten out with fingers and add 1.5 tbsp of filling into centre, and optional mozarella. Pull the sides up to encase the filling and pinch the dough at the top to avoid leakage 7. Brush with egg wash and cover with tea towel, allow to rise for another hour 8. Brush again with egg wash after 2nd rise 9. 💢 PETITS PAINS POULET PANÉ 💢 Pour 6/7 petits sandwich 250 gr de semoule fine 150 gr de farine 5 gr de sel 5 gr de levure sèche de boulanger 250 ml d’eau tiède Mettez tout les ingrédients dans un saladier et pétrissez pendant 10 bonnes minutes. Farinez le plan de travail, et aplatissez la boule de pâte, 1 cm d’épaisseur . Avec un emporté pièce (11 cm de diamètre ) appuyée sur la pâte, retirez l’excédent de pâte et formez une boule. Posez vos mini Pain sur une plaque chemisée de papier cuisson. Couvre la plaque d’une serviette et d’un sac et laissez poser pendant à nouveau 1h Pendant ce temps on va préparer le poulet pané. 3 filets d’escalope de poulet Sel poivre noir 1 cac d’épice pour poulet Chapelure panko de chez @sweetchef.fr Sel poivre noir thym ciboulette 1 cac de maïzena Curcuma paprika 200 ml de lait fermenté Bain d’huile Dans un bol du mixeur, versez l’escalope de poulet coupé en morceau. Avec le sel et le poivre noir et l’épice pour poulet. Mixez pendant quelques secondes. Mouillez vos mains puis formez des steak bien ronde. Disposez les sur un plat chemisée de papier cuisson puis réservez au congélateur pendant 1 heure. Pendant ce temps on va cuire les petits pains sur une poêle anti adhésive et sans matière grasse. La cuisson doit se faire à feu moyen. Retournez les de temps en temps. Jusqu’à qu’ils soient cuit. Couvrez les d’une serviette Revenons au poulet pané. Dans une assiette creuse, versez le lait fermenté, ajoutez le sel, le poivre noir, le curucma, le thym, le paprika, la ciboulette et une cac de maïzena. Mélangez. Dans une autre assiette versez la chapelure. Trempez vos steak de poulet dans le mélange, puis dans la chapelure. Faites cuire dans un bain d’huile bien chaud à feu moyen. En le retournant de temps en temps. Égouttez les et disposez sur une assiette chemisée de papier absorbant. La sauce : mélangez 2 cas de mayonnaise, 1 cac d’harissa, et de la ciboulette. Ouvrez vos pains, mettez un peu de sauce, le poulet pané, et une tranche de fromage cheddar. Episode 26 of 30 of the Ramadan series: Coconut lime salmon 🥥🍣 Recipe below 👇🏽 Ingredients: 2-4 salmon fillets Salt Black pepper 2 tbs olive oil 3 garlic cloves, minced 2 tsp ginger, minced 1 tbs light brown sugar 1-2 tbs chilli paste 400g/14 ounce can coconut milk 1 tbs fish sauce/salt/soy sauce Zest of 1 lime 1 tbs lime juice Rice/vermicelli noodles to serve Cilantro, red chillies, lime slices to garnish Steps: 1. Lightly season the salmon with salt and pepper on both sides. 2. Heat the oil in a pan over med-high heat then sear the salmon for about 1 minute on each side. You want it to still be raw inside. 3. Set the salmon aside. 4. In the same pan on medium heat add the garlic and ginger and cook for 2 minutes. 5. Add the brown sugar and cook for 20-30 seconds or until caramelised (see video). 6. Add chilli paste and cook for 1 minute. 7. Add coconut milk and stir to dissolve the sugar. 8. Add fish sauce, salt or soy sauce then return the salmon to the sauce and cook on low heat for 5 minutes or until the salmon is cooked through. 9. Remove the salmon and add lime zest and juice. Continue to cook until thickened, about 5 minutes. 10. Taste for seasoning and adjust lime juice and salt/fish sauce/soy sauce to taste. 11.
