Slowcooker Macaroni & Cheese Melt 🌶️ 🧀 497 cals If a Chilli Con Carne, Macaroni & Cheese had a baby this is what it would be. I cooked this on This Morning last week. Recipe from my new low prep, low calorie Slowcooker book EVEN EASIER currently £10📕 Serves: 5 Ingredients - 400g lean beef mince - 700g passata - 1 tbsp tomato purée - 3 garlic cloves, grated or chopped - Handful of fresh coriander, chopped, plus extra to garnish - 1 red chilli, sliced - 1 onion, chopped - 1 packet of chilli con carne spice mix (or you can make your own) - 700ml chicken stock - 400g tin of kidney beans, drained and rinsed - 1 red pepper, chopped - 250g dried macaroni - 120g Cheddar cheese (reduced fat if you can), grated Salt and pepper, to taste Method 1. Ideally brown the mince but if not, Add the beef mince, passata, tomato purée, garlic, half the coriander, the chilli, onion, chilli con carne spice mix and salt and pepper to the slow cooker. Cook on high for 4 hours or low for 7-8 hours. 2. Add the stock, kidney beans, red pepper and macaroni and cook on high for a further 45 minutes. If cooking on low, you'll need to leave it for closer to 1 hour to cook the pasta. 3. Slowcooker Chicken Fajita Pasta 🍝🌶️ (591 calories) This is one of my go to meal prep and relatively cheap to make. If you like chicken fajitas and pasta then this is the perfect combo for you. I love sweet peppers but you can use regular bell peppers. Ingredients - 3 x chicken breasts - 1 tsp cumin - 1 tsp oregano - 1 tsp chilli - 1 tbsp paprika - 4-5 garlic cloves crushed - 1 x onion - 2 x cans of chopped tomatoes - Red pepper - 3 tbsp of soured cream - 300g dry penne pasta - 200ml + chicken stock - you may need more keep an eye - 100g cheddar cheese - Salt and pepper - Fresh coriander / chilli to garnish Method: 1. Add the chicken, onion, herbs, spices, garlic and tomatoes to the slowcooker for 3 hours on high or 6 on low 2. Add in the pasta, peppers and stock. You can also add the sour cream at this stage but sometimes I add at the end. Keep an eye on stock you may need to add more depending on timing. 300ml is the max 3. Cook the pasta, peppers and stock for 45-50 minutes. Stir in cheese and sour cream if adding at the end 4. Airfryer Chicken Doner Kebab 🥙 Who doesn’t love a kebab? Here is a simple way to make one without using mince. Less than 5 mins hands on time it’s beyond simple. Coat the chicken in the spices and oil, add to 2-3 metal skewers. You can also use wooden. If using wooden steep them in water so they don’t burn 2. Slowcooker Chicken Fajita Pasta 🍝🌶️ (591 calories) This is one of my go to meal prep and relatively cheap to make. If you like chicken fajitas and pasta then this is the perfect combo for you. I love sweet peppers but you can use regular bell peppers. Ingredients - 3 x chicken breasts - 1 tsp cumin - 1 tsp oregano - 1 tsp chilli - 1 tbsp paprika - 4-5 garlic cloves crushed - 1 x onion - 2 x cans of chopped tomatoes - Red pepper - 3 tbsp of soured cream - 300g dry penne pasta - 200ml + chicken stock - you may need more keep an eye - 100g cheddar cheese - Salt and pepper - Fresh coriander / chilli to garnish Method: 1. Add the chicken, onion, herbs, spices, garlic and tomatoes to the slowcooker for 3 hours on high or 6 on low 2. Add in the pasta, peppers and stock. You can also add the sour cream at this stage but sometimes I add at the end. Keep an eye on stock you may need to add more depending on timing. 300ml is the max 3. Cook the pasta, peppers and stock for 45-50 minutes. Stir in cheese and sour cream if adding at the end 4. Airfryer Crispy Bang Bang Chicken Pitta Pockets - 🥙🌶️ 235 cals per pocket or 470 for a full pitta I could honestly eat these every single day a bang bang sauce just goes so well with crispy chicken. Now traditionally the chicken is “banged” 😅but we won’t be doing that, we going crispy in a cornflake crumb. Ingredients - 2 x chicken breasts - 1 x beaten egg - 100g crushed cornflakes Bang Bang Sauce - 4 tbsp light mayo - 1 tbsp soy sauce - 2 tbsp sriracha - 1 tbsp peanut butter - 1 tbsp honey - 1 tbsp garlic purée or 3 grated cloves - 2 tbsp sweet chilli sauce Additional - Pitta breads - Lettuce - Chilli if you like heat - Spring onions optional 1. Mix together your bang bang sauce 2. Coat chicken pieces in the egg then in the fine cornflake crumb 3. Spray with oil and airfry for 12 mins at 200 4. Toss in some of the sauce 5.
