SMACK’N CHEESE 🧀🥩 This turned out to be one of my absolute favorite recipes to date. Couldn’t have expected better. If you loved Smoked Steak Queso, you’ll be delighted to sink your teeth into a few scoops of this🔥 • INGREDIENTS 3 NY Strips, or steak of your choice 2 1/2 C elbow macaroni 1/4 C flour 2 1/2 C milk @kindersflavors The Blend 3-4 total cups of grated cheese: -8oz Smoked Gouda -8oz Monterey Jack -8oz Cheddar -8oz Gruyère OPTIONAL 1/2 yellow onion Thyme and rosemary garnish 1/4 C Parmesan cheese • INSTRUCTIONS -Heat griddle or stovetop on high and begin boiling a large pot of water. -While waiting to boil, dice up half an onion, slice up your steak and thoroughly season with @kindersflavors The Blend, or another steak seasoning, for max flavor. -Once boiling, throw in elbow mac and boil for 9-11 mins -While that boils, heat up a saucepan over medium heat and melt the butter, add the flour, and slowly add milk. Stir overt 20 or so seconds to thicken -While that thickens, strain out mac and rinse with cold water to keep them from sticking together -Finish up your creamy mixture and dial the griddle or stovetop on low -Preheat smoker to 275°F and alternate cheese and mac in a cast iron pot with a little extra cheese for the top. Dump on that milk/butter/flour mixture. Smoked Steak Queso isn’t just the perfect addition to a party- tasting it will be an experience you’ll never forget! Level up generic queso with flavors that’ll get your taste buds singing🔥 Recipe below! • Ingredients: 2 NY Strip steaks 16oz Queso Blanco Velveeta 8oz Colby Jack Cheese 8oz cream cheese 4oz smoked cheddar cheese (optional) 1 can of Rotel tomatoes with green chiles 1 can of green chiles 1/2 yellow onion 1 C milk Steak seasoning (I used @Rufus Teague BBQ Steak Rub) Salt and pepper to taste • Instructions: -Cut up all your cheese into cubes for easier and quicker melting. Preheat pellet grill to 225°F and allow to melt and smoke for 1-2hrs (until piping hot and dripping with cheese) -In that time, add in the tomatoes, chilies, salt and pepper, and milk. Give a good mix and allow to smoke while you preheat the griddle on high (piping hot!) -While the griddle preheats, dice onion, and cut steaks into strips. Season all sides for maximum flavor. -Oil up the griddle, and slap the steaks on. Cook for 5 minutes tops to ensure they’re still a little pink and juicy in the middle. Cook onion in the leftover steak juice and mix into the queso. -Chop up the steak into bite-sized pieces and garnish over the queso. SMACK’N CHEESE 🧀🥩 This turned out to be one of my absolute favorite recipes to date. Couldn’t have expected better. If you loved Smoked Steak Queso, you’ll be delighted to sink your teeth into a few scoops of this🔥 • INGREDIENTS 3 NY Strips, or steak of your choice 2 1/2 C elbow macaroni 1/4 C flour 2 1/2 C milk @kindersflavors The Blend 3-4 total cups of grated cheese: -8oz Smoked Gouda -8oz Monterey Jack -8oz Cheddar -8oz Gruyère OPTIONAL 1/2 yellow onion Thyme and rosemary garnish 1/4 C Parmesan cheese • INSTRUCTIONS -Heat griddle or stovetop on high and begin boiling a large pot of water. -While waiting to boil, dice up half an onion, slice up your steak and thoroughly season with @kindersflavors The Blend, or another steak seasoning, for max flavor. -Once boiling, throw in elbow mac and boil for 9-11 mins -While that boils, heat up a saucepan over medium heat and melt the butter, add the flour, and slowly add milk. Stir overt 20 or so seconds to thicken -While that thickens, strain out mac and rinse with cold water to keep them from sticking together -Finish up your creamy mixture and dial the griddle or stovetop on low -Preheat smoker to 275°F and alternate cheese and mac in a cast iron pot with a little extra cheese for the top. Dump on that milk/butter/flour mixture. Smoked Steak Queso isn’t just the perfect addition to a party- tasting it will be an experience you’ll never forget! Level up generic queso with flavors that’ll get your taste buds singing🔥 Recipe below! • Ingredients: 2 NY Strip steaks 16oz Queso Blanco Velveeta 8oz Colby Jack Cheese 8oz cream cheese 4oz smoked cheddar cheese (optional) 1 can of Rotel tomatoes with green chiles 1 can of green chiles 1/2 yellow onion 1 C milk Steak seasoning (I used @Rufus Teague BBQ Steak Rub) Salt and pepper to taste • Instructions: -Cut up all your cheese into cubes for easier and quicker melting. Preheat pellet grill to 225°F and allow to melt and smoke for 1-2hrs (until piping hot and dripping with cheese) -In that time, add in the tomatoes, chilies, salt and pepper, and milk. This was one of the best tasting Steaks I’ve had in a long time! The texture was insane! I cooked this on my @schwankgrills from start to finish, and the crust it gave this steak at 1500°F was absolutely perfect! Ingredients: • 1-2 NY strips • Salt • 3 tbsp crispy fried onions • 3 tbsp Gruyère cheese • 1 tbsp Parmesan cheese • 1 tbsp fresh thyme leaves • 2 tbsp melted butter First in season up the NY strips with just salt and set at room temp for 30 mins or so before preheating the Schwank grill! Place meat probes in and cook the steaks for 90 seconds on the first side, then flip, and cook for 3 minutes of so on the back side… or until the internal hits about 105°F. let the steaks rest for 7-10 mins, and they should rise up to about 125°F. While the steak rests, combine all the ingredients for the cheese crust into a bowl, and mix well. Depending on the size of the steaks you may need to double this up! Spread a generous amount of the mixture on each steaks and place it back into the Schwank grill to broil at the lowest temperature level until bubbly and golden brown! Sometimes a simple cook is what’s needed. For this we grilled up 2 x sharing sirloins using the @MEATER on the @Kamado Joe Cooked to an internal temp of 54°c We part boiled some baby potatoes, sliced them and finished them off on the new carbon steel half moon pan. Just before the end we poured some of the melted herb / cowboy butter over the potatoes. We had made a batch of this recently and kept some frozen to make some you’ll need: For the cowboy butter we used 250g @Dromona softened to which we added: 3 cloves of garlic crushed 1tbsp of freshly chopped chives 3 tbsp fresh chopped parsley 1 tsp chilli flakes 1 tbsp Dijon mustard 1 tsp paprika 1/2 tsp cayenne Zest of 1/2 lemon Juice of 1/2 lemon 1/2 tsp of fresh thyme Pinch of pepper (salt not required unless you are using unsalted butter) Combine the ingredients well with a fork. Once combined transfer to a bowl to use. This will make enough butter for a few cooks. Perfect on steaks, corn, ciabatta, chicken etc. If you roll it in cling film it will keep perfectly in the freezer for use for a few months. We then chopped some chilli & scallions which we mixed with some grated @dromonamakesit cheese to stuff the peppers which we grilled indirect so they still had some bite but the cheese had melted. What more could you want for your date night? 🔥 Ingredients: For the steak *Ribeye steak 500g *Olive oil *Rosemary *Thyme *Garlic *Salt & Pepper *1 cup Butter *1 tbsp Truffle Salsa For the mashed potatoes *300g Potatoes *water *salt *1/2 cup Milk *1/4 cup Cream *2 tbsp Butter *salt & pepper *nutmeg Instructions: *For the butter: mix softened butter and truffle salsa until well combined. *Place on a pre-cut cling film, roll and shape into a log. Secure ends and freeze for 1 hour. *For the steak: dry steak using a paper towel. Season with salt and pepper. *In a heavy cast iron pan, Sear steak in olive oil until browned. *Add butter, garlic and herbs. Baste steak until desired doneness is achieved.
