Super Green Sheet Pan Soup with pesto grilled cheese croutons 🥣🌱 Recipe link in bio or shortened version below 👇 3 tbsp olive oil 1 large leek, trimmed, washed & cut into 1” pieces 1 head garlic 1/2 of a head of cauliflower 1/2 of a head of broccoli 1 medium-large zucchini, diced 2 medium Yukon gold potatoes, peeled and diced 2 tsp kosher salt, divided 1/2 tsp black pepper 3 cups chicken or vegetable broth 1 cup frozen peas Juice from 1 large lemon (3 tbsp) 2 cups spinach 3 tbsp fresh parsley Optional: 1/4 tsp red pepper flakes Preheat oven to 400˚F. Slice off the top of the head of garlic. Place the leeks, cauliflower, broccoli, zucchini, potatoes and garlic on a large sheet pan. Drizzle with olive oil, 1 tsp salt and pepper. Roast for 30 minutes, until all vegetables are fork tender. About 10 minutes before the vegetables are done, add the broth and peas to a small pot and heat until simmering. MCHICKEN SHAWARMA SHEET PAN DINNER . If you love quick, easy but super flavorful meals, try making this chicken shawarma sheet pan dinner. Grilled chicken is great, but sometimes you dont feel like firing up the grill and this is an incredible way to put your oven to good use for a ridiculously good meal! I paired this up with some oven roasted grilled onions that were unreal, a delicious cucumber yogurt spread, and side salad. You can serve it over rice, in a pita, or if you are keeping things lowcarb, my high protein lowcarb Kaizen rice. . Here is how to make it: 1.Cut 1.5-2lb boneless skinless chicken thighs into strips or chunks. Place in a large bowl. Drizzle with 1/2 tbsp olive oil, 3 tbsp plain greek yogurt, 2 tbsp tomato paste, juice of 1 large lemon, 6 minced garlic cloves, 1 tbsp thyme or oregano, 1 tbsp sweet paprika, 1/3 tsp cinnamon, 1 tsp cumin, and a couple pinches salt + pepper. . 2.Mix really well and marinate for at least 2-6 hrs, but ideally overnight. This is important! . 3.When you’re ready to eat, remove chicken from fridge and let it sit at room temp for 30 mins. . 4.Preheat oven to 400F. Line a baking tray with parchment paper and add the chicken to the tray, dont overcrowd the tray. Then cut 2 red onions into wedges and toss around the chicken on the tray. Drizzle with more olive oil and sprinkle with about 1/2 tbsp sumac. . 5.Pop into the oven at 400F for 37-40 mins. . 6.Make the cucumber sauce by mixing 3/4 cup plain greek yogurt, 1 Persian cucumber finely diced, 3 tbsp finely chopped fresh dill, 1 small shallot finely shredded/processed, juice of half a lemon, a couple pinches salt & pepper. Mix well. . 7.Remove the sheet pan from the oven, then top with a few dollops of the spread, lots of fresh herbs (parsley, dill, or mint would be great here!), diced cucumber, another dusting of sumac, and fresh lemon juice. . My fav sheet pan meal for summer🙏 Recipe below👇 Ingredients: 6 bone in skin on chicken thighs 1 zucchini, sliced into half moons 1 yellow bell pepper, cut into 1 inch pieces 1 red onion, cut into 1 inch pieces 2/3 cup cherry tomatoes 1/2 cup Kalamata olives 1/2 cup feta, crumbled 2 tbsp fresh parsley, chopped Marinade: 1/2 cup olive oil 1 lemon, juiced 4 garlic cloves, minced 1 tsp Dijon mustard 2 tsp dried oregano 1 tsp dried thyme 1 tsp salt 1/2 tsp pepper Instructions 1. Prepare marinade. Pour 1/2 the marinade over chicken thighs and marinate in the fridge for 15 minutes or up to an hour. 2. Slice zucchini, bell pepper, and red onion. Add veggies to a lightly oiled baking sheet. Pour reserved 1/2 of the marinade over veggies. Tossing to coat. 3. Place marinated chicken thighs on top. Sheet pan dinner! Or meal prep 🤷🏼♀️ Ingredients: 3-4 boneless skinless chicken thighs 1 red bell pepper, chopped 1 sweet potato, cut into cubes 1/4 of a red onion, cut into thick slices 10 oz cauliflower, cut into small pieces 6 oz brocoli florets, cut into small pieces 1/2 packet hidden valley ranch seasoning 1/2 cup olive oil 1 heaping tbsp mayo 8 oz freshly shredded mozzarella cheese 2 tsp garlic powder & onion powder 2 tsp paprika 2 tsp dried parsley Salt & pepper to taste Directions: Make your spice blend by combining garlic powder, onion powder, paprika, and dried parsley. Use half of the seasoning blend to season both sides of the chicken and set the other half aside. Chop up the chicken and veggies in similar size pieces. On a baking sheet with a rack add red onion, red bell pepper, sweet potato, cauliflower, and broccoli. Add the chopped chicken over the veggies. Then take the other half of the seasoning and shake it over the chicken and veggies. In a measuring cup add olive oil, ranch seasoning, mayo, and whisk it until combined. Pour the mixture over the chicken and veggies and give it a toss. Bake in the oven at 400°F for 30 minutes. When it has 5 minutes remaining take it out and sprinkle over the mozzarella cheese. 20 Minute Chicken Fajita Taco 🌮 Ingredients: - 4 chicken thighs, sliced - 1 red capsicum - 1 yellow capsicum - 1 red onion - 2 cloves garlic - 1 avocado - 1 tbsp chilli powder - 2 tsp ground cumin - 2 tsp paprika - 2 tsp sugar - 1 tsp garlic powder - 1 tsp onion powder - 1 tsp salt - 1 tsp msg (optional) 1. Combine chilli powder, cumin, paprika, sugar, garlic powder, onion powder and salt in a bowl. Stir to combine and set aside 2. Remove avocado skin and seed, place in a bowl with the juice of half a lime and 1 tsp of the fajita seasoning. Smash with a fork then leave in the fridge until ready to serve 3. Add sliced chicken thighs, half the olive oil and the juice from the other half of the lime, mixing to combine and setting aside to marinate for 5 mins 4. Slice all capsicum (bell pepper) and onion into strips, lay out in a baking tray lined with baking paper, drizzle half the olive oil and remaining fajita seasoning over top, toss to fully combine and bake in an oven preheated to 200°C for approx 12 mins or until cooked through and slightly charred 5. Epsiode 5 -sheet pan fajitas! My son loves all things chipotle so when given the chance he will always choose “chipotle” for dinner, and this is how we make it! Sheet pan dinner! Or meal prep 🤷🏼♀️ Ingredients: 3-4 boneless skinless chicken thighs 1 red bell pepper, chopped 1 sweet potato, cut into cubes 1/4 of a red onion, cut into thick slices 10 oz cauliflower, cut into small pieces 6 oz brocoli florets, cut into small pieces 1/2 packet hidden valley ranch seasoning 1/2 cup olive oil 1 heaping tbsp mayo 8 oz freshly shredded mozzarella cheese 2 tsp garlic powder & onion powder 2 tsp paprika 2 tsp dried parsley Salt & pepper to taste Directions: Make your spice blend by combining garlic powder, onion powder, paprika, and dried parsley. Use half of the seasoning blend to season both sides of the chicken and set the other half aside. Chop up the chicken and veggies in similar size pieces. On a baking sheet with a rack add red onion, red bell pepper, sweet potato, cauliflower, and broccoli. Add the chopped chicken over the veggies. Then take the other half of the seasoning and shake it over the chicken and veggies. In a measuring cup add olive oil, ranch seasoning, mayo, and whisk it until combined. Pour the mixture over the chicken and veggies and give it a toss. Bake in the oven at 400°F for 30 minutes. When it has 5 minutes remaining take it out and sprinkle over the mozzarella cheese. 20 Minute Chicken Fajita Taco 🌮 Ingredients: - 4 chicken thighs, sliced - 1 red capsicum - 1 yellow capsicum - 1 red onion - 2 cloves garlic - 1 avocado - 1 tbsp chilli powder - 2 tsp ground cumin - 2 tsp paprika - 2 tsp sugar - 1 tsp garlic powder - 1 tsp onion powder - 1 tsp salt - 1 tsp msg (optional) 1. Combine chilli powder, cumin, paprika, sugar, garlic powder, onion powder and salt in a bowl. Stir to combine and set aside 2. Remove avocado skin and seed, place in a bowl with the juice of half a lime and 1 tsp of the fajita seasoning. Smash with a fork then leave in the fridge until ready to serve 3. Add sliced chicken thighs, half the olive oil and the juice from the other half of the lime, mixing to combine and setting aside to marinate for 5 mins 4. Slice all capsicum (bell pepper) and onion into strips, lay out in a baking tray lined with baking paper, drizzle half the olive oil and remaining fajita seasoning over top, toss to fully combine and bake in an oven preheated to 200°C for approx 12 mins or until cooked through and slightly charred 5. Slice off the top of the head of garlic. Place all of the vegetables on a large sheet pan. Drizzle with olive oil, 1 1/2 tbsp curry powder, salt & pepper and gently toss to coat. Roast for 35-45 minutes, stirring once or twice, until all vegetables are fork tender. About 10 minutes before the vegetables are done, add the broth, coconut milk and tomato paste to a small pan over medium heat and heat until lightly simmering. Buffalo chicken sheet pan dinner! This might rival my moms meatloaf, and thats saying a lot! Miso on my salmon forever !!! Recipe (Serves 4): 1 lb brussels, stems removed and sliced in half or thirds 2 sweet potatoes, cut 1/4” thick 1.5 lbs thick cut salmon (I used king salmon) 2 tbsp olive oil Salt + pepper, to taste Green onions, diced Miso glaze: 2 tbsp miso paste 1 tbsp sesame oil 1 tbsp honey or maple syrup 2 tbsp rice vinegar 2 tbsp coconut aminos Optional: sriracha to make it spicy 1. Preheat oven to 400 and line a large baking sheet with parchment paper. 2. Toss the Brussels and sweet potatoes with 2 tbsp olive oil, salt and pepper. Spread in an even layer and bake for 5-7 minutes. 3. Meanwhile, prep your salmon by seasoning with salt and pepper and drizzling with olive. Make room on the sheet pan for the salmon in the center. Return to oven for 20 minutes. 4. Make your miso glaze by whisking all ingredients together. Taste and adjust sweetness or spice level if needed. 5. After 20 minutes, remove veggies and salmon and pour glaze over the top of everything. Return to oven for 5 minutes. AND all four of my kids inhale it. 🥦🫑 ✨ Balsamic Chicken & Veggies ✨ * 2 small zucchini, cut into 1-inch pieces * 1 - 2 small yellow squash, cut into 1-inch pieces * 1 bell pepper, cut into 1-inch pieces * 1 red onion, cut into 1-inch pieces * 1 head of broccoli, cut into pieces * 2 boneless skinless chicken breasts, cut into thin strips * ⅓ c balsamic vinegar * 3 Tbsp avocado oil * 1-2 Tbsp honey * 1 tsp dried basil * ½ tsp dried oregano * 1 tsp salt * ½ tsp pepper Preheat the oven to 400° F. Put all cut veggies and chicken strips on sheet pan. Mix the rest of the ingredients in a bowl. Pour over veggies/chicken. Toss everything together until evenly coated. White Sheet Pan Veggie Lasagna Recipe Below. #vegetarian #easyrecipe #sheetpandinner Ingredients 1 cup frozen broccoli, defrosted 1 cup frozen peas, defrosted 1 cup frozen spinach, defrosted 1 cup frozen butternut squash, defrosted 6 tbsp butter, room temp 3/4 cup all-purpose flour 4 cups milk, room temp 1 1/2 tsp salt 1/2 tsp pepper 1/4 tsp nutmeg 3/4 cup grated Parmigiano Regianno 15 ounces ricotta 3 tbsp parsley 1 lb lasagna sheets broken into 3 inch pieces 3/4 cup pesto (homemade or store bought) 8 ounces low moisture shredded mozzarella Instructions -Preheat oven to 400F Drain water from defrosted frozen veggies and set aside. -Time to make the bechamel sauce. In a large sauce pan, melt butter over medium heat. Once the butter has melted and begins to bubble, add flour and whisk until combined. Continue to cook the mixture for 2 more minutes, whisking occasionally. -Slowly add milk, whisking as you add it. -Add salt, pepper and nutmeg. Continue to cook the bechamel until it is thickens to the consistency shown in the video then remove from heat and set aside. -To a small bowl add ricotta, 1/4 cup grated parm, 1/2 tsp salt and parsley. Mix well and set aside. -Bring a large pot of salted water to boil. Add lasagna noodles and cook until al dente. Drain the pasta of all the water, add the pasta back to the post and immediately mix in the pesto sauce. -Lightly grease a 12 x 17 pan with 1 tbsp olive oil. Add 1/2 the bechamel sauce to the greased pan and use a spatula to evenly spread the sauce to cover the pan. -Next evenly distribute the pesto lasagna noodles, followed by the all of the veggies. -Add dollops of the the remaining bechamel sauce and use the spatula to spread it over the veggies. -Top with remaining 1/2 cup grated parm, all the shredded mozzarella and dollops of the ricotta mixture. -Bake on middle rack for 30 minutes.
